Pomfret fish with herbs (杞子鲳鱼)

Well there are a few ways of cooking a Pomfret in chinese cooking. One either fry it, or steam it; of course you could always argue there are many other ways but here i would not want to elaborate on it. Here I am going to introduce Cooking Pomfret with some Chinese Herbs, which is by all means is the "Gei Zhi" or Chinese Wolfberries 杞子.

1            Pomfret fish 鲳鱼
5pcs     Ginger (small pieces/ shreaded)
60g       Chinese Wolfberries 杞子
2-3pcs  Chinese dried mushroom

SAUCE:
1tbsp    Soy Sauce
1tbsp    Sesame oil
2tbsp    Water
              A bit of sugar
  1. First wash the pomfret properly. Soaked the mushrooms in a bowl of warm water with some sugar. Then cut the mushrooms into small pieces.
  2. Rinse the chinese wolfberries and cut the ginger in slices or shread it thin. 
  3. Mix the sauces altogether and leave it aside.
  4. Now prepare a plate that can fit into the steamer and make sure the fish can be place in it as well. Boil the water and get ready the steamer, before you place the fish in it.
  5. Place the mushrooms on the plate first then lay the fish on top; next sprinkle the ginger and chinese wolfberries on top if it. Now stir the sauce and drip it over the fish. Add little more water according to the size of the fish. Alternatively, you can increase the amount of soy and oil as well.
  6. Now the steamer is ready, just place the plate of fish in the steamer for at least 5 minutes or more depending on the size of the fish, till cooked.
If this dish is accompanied by rice it would taste better otherwise you may reduce the soy sauce so that it is not so salty.
